Recipe Name: Radish Ladoo (মুলোর লাড্ডু)
Ingredients:
1 cup grated radish
1 cup sugar
1 cup grated coconut
Bay leaves
Cardamom seeds
Raisins
3/4 teaspoon ghee
A few drops of lemon essence
Preparation:
Preparing the Radish:
Grate 1 cup of fresh radish.
Boil water in a pot and soak the grated radish in the hot water. Cover the pot and let the radish cook until tender.
Once the radish is cooked, drain it well by squeezing out all the excess water.
Preparing the Coconut and Other Ingredients:
Grate 1 cup of fresh coconut.
Gather cardamom seeds, raisins, and lemon essence for later use.
Cooking Process and Method:
Cooking the Radish:
Heat a pan and add 3/4 teaspoon of ghee.
Add the drained grated radish to the pan along with a bay leaf.
Stir-fry the radish in the ghee until it begins to release a pleasant aroma.
Mixing and Cooking the Ingredients:
Add the grated coconut, sugar, cardamom seeds, and raisins to the pan with the radish.
Continuously stir the mixture over medium heat until the sugar dissolves and the mixture thickens. This process will ensure the ingredients blend well, forming a cohesive mixture.
Cook until the mixture reaches a thick consistency and starts to leave the sides of the pan (known as "pak" stage).
Forming the Ladoos:
Remove the pan from the heat and mix in a few drops of lemon essence.
Allow the mixture to cool slightly until it's comfortable to handle.
Once cooled, shape the mixture into small, round ladoos by rolling portions of the mixture between your palms.
Serving:
Radish Ladoo is a unique and flavorful sweet treat.
Serve the ladoos once they have completely cooled and set.
They can be enjoyed as a dessert or as part of a festive spread. The combination of radish with coconut and cardamom gives these ladoos a distinctive taste that is both aromatic and sweet.
